Early Christians adopted the egg as a symbol of the resurrection of Jesus Christ, which Easter celebrates.  The tradition of eating eggs is also linked to Lent, which is the 40 days before Easter.  Lent is associated with people giving up something or fasting, which in ancient times included meat, dairy and eggs.  The chickens, though, still laid eggs across Lent, so people used to hard boil the eggs, decorate them and give them as gifts at Easter.

It seems that eating chocolate eggs at Easter started in the 19th century.  This became very popular, very quickly; giving it a modern touch to an age-old religious custom.
